Preparation Steps

  2. Separate egg yolks from egg whites and beat the egg whites until stiff peaks form.
  3. Combine egg yolks with monkfruit sweetener and vanilla extract, mixing until light and fluffy.
  4. Add Greek yogurt to the egg yolk mixture and mix until smooth, then sift in cornstarch.
  5. Gently fold the stiff egg whites into the yogurt mixture until combined.
  6. Pour the batter into the baking dish and bake in a water bath at 330°F for 45 minutes.
  7. Increase temperature to 350°F and bake for an additional 15 minutes.
  8. Allow the cake to cool in the oven with the door cracked for 1 to 2 hours.
