Stuffed Pepper Casserole is a must-try family dish!

 

All the flavors of classic stuffed peppers, transformed into an easy, deconstructed casserole. With ground beef, rice, peppers, and melty cheese, it’s a satisfying and weeknight-friendly dish.

Ingredients
  

  • 1 lb ground beef or turkey
  • 1 small onion diced
  • 3 bell peppers any color, chopped
  • 2 cups cooked rice
  • 1 can 14.5 oz diced tomatoes, drained
  • 1 can 8 oz tomato sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 ½ cups shredded mozzarella or cheddar cheese divided

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef with onion and bell peppers until beef is browned. Drain grease.
  3. Stir in cooked rice, diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper.
  4. Mix in 1 cup of cheese, then pour mixture into a greased 9x13 baking dish.
  5. Sprinkle remaining cheese on top.
  6. Bake for 25-30 minutes until cheese is melted and bubbly.
  7. Let cool slightly before serving.

Notes

  • You can use cauliflower rice for a low-carb version.
  • Make it spicy by adding red pepper flakes or chopped jalapeños.
