Method
- Preheat oven to 375°F (190°C).
- In a large skillet, cook ground beef with onion and bell peppers until beef is browned. Drain grease.
- Stir in cooked rice, diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper.
- Mix in 1 cup of cheese, then pour mixture into a greased 9x13 baking dish.
- Sprinkle remaining cheese on top.
- Bake for 25-30 minutes until cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
- You can use cauliflower rice for a low-carb version.
- Make it spicy by adding red pepper flakes or chopped jalapeños.
