Preparation
- Preheat the oven to 375°F (190°C).
- Wash and dry the sugar pumpkins thoroughly. Cut off the tops and scoop out the seeds.
- Drizzle each pumpkin with olive oil and season with salt and pepper.
- Pre-bake the pumpkins for 30-40 minutes until slightly tender.
Cooking the Filling
- Heat olive oil in a skillet and cook the ground turkey until browned.
- Add onion, garlic, celery, and carrots to the skillet and sauté until softened.
- Stir in cranberries, sage, parsley, thyme, rosemary, and nutmeg.
- Pour in the chicken broth and let the mixture simmer for 5-10 minutes.
- Mix in the cooked rice and Parmesan cheese, seasoning to taste.
Stuffing the Pumpkins
- Carefully fill each pre-baked pumpkin with the turkey mixture.
- Replace the tops of the pumpkins and bake for an additional 20-25 minutes.
- During the last 5-10 minutes, remove the tops to allow the filling to brown.
