Preparation
- In a mixing bowl, combine sweet corn, rinsed black beans, halved cherry tomatoes, Greek yogurt, shredded cheese, chopped cilantro, fresh lime juice, minced garlic, chili powder, and salt. Stir until well combined and set aside.
- In another bowl, mix ground beef with taco seasoning, salt, and pepper. Divide into six portions and shape into loose balls.
Cooking
- Preheat a griddle over medium-high heat and oil it lightly. Place a tortilla on the griddle, add a beef ball, and smash it down into a thin patty. Cook for 2-3 minutes until browned, then flip and add cheese to melt for another minute.
- Transfer cooked burgers onto a serving platter. Top each with a scoop of street corn mixture. Optionally, add lettuce, avocado, or guacamole.
