Ingredients
  

Dough
  • 1 cup Whole Milk Warm to 105°F-110°F
  • 2.25 teaspoons Active Dry Yeast Must be fresh
  • 1/4 teaspoon Sugar For activation
  • 1/4 cup Unsalted Butter Melted
  • 2 large Eggs Room temperature
  • 1/2 cup Granulated Sugar
  • 4 cups All-Purpose Flour Measured carefully
  • 1 teaspoon Salt
Filling
  • 2 cups Fresh Strawberries Chopped and ripe
  • 1/2 cup Granulated Sugar
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Water
  • 1 tablespoon Cornstarch
Icing
  • 4 ounces Cream Cheese Softened
  • 1/4 cup Unsalted Butter Softened
  • 2 cups Powdered Sugar
  • 2 tablespoons Lemon Zest
  • 2 tablespoons Whole Milk Adjust for consistency

Method
 

Making the Rolls
  1. Proof the yeast by combining warm milk, yeast, and sugar in a bowl. Let sit for 10 minutes.
  2. In a stand mixer, combine eggs, melted butter, and proofed yeast mixture. Mix on low.
  3. Gradually add sugar, flour, and salt; mix until a soft dough forms.
  4. Transfer dough to a greased bowl, cover with a towel, and let rise for 1 hour.
  5. For the filling, cook strawberries, sugar, and lemon juice in a saucepan until simmering.
  6. Create a slurry with water and cornstarch; add to the mixture until thickened.
  7. Roll out the dough, spread the cooled strawberry jam, and cut into strips.
  8. Roll each strip tightly with seam side down and place in a greased dish.
  9. Cover and let rise until doubled, about 30-45 minutes.
  10. Preheat oven to 350°F and bake for 25-30 minutes until golden brown.
  11. Make icing by beating cream cheese, butter, and powdered sugar until smooth. Stir in lemon zest and milk.
  12. Drizzle lemon icing over rolls after cooling slightly.
