Ingredients
  

  • Fresh strawberries pureed
  • All-purpose flour
  • Baking powder
  • Baking soda
  • Salt
  • Unsalted butter softened
  • Granulated sugar
  • Eggs
  • Vanilla extract
  • Buttermilk
  • Pink food coloring optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, then stir in vanilla and strawberry puree.
  5. Gradually mix in dry ingredients alternating with buttermilk.
  6. Add pink food coloring if using for a vibrant hue.
  7. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  8. Cool completely before frosting with your favorite strawberry frosting.

Notes

  • Use fresh or frozen strawberries for the puree.
  • Top with whipped cream or strawberry buttercream for extra flavor.
