Ingredients
  

  • 2 ribeye or sirloin steaks
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 garlic cloves smashed
  • Fresh thyme or rosemary optional
  • 1 lb russet potatoes cut into fries
  • 2 tablespoons vegetable oil for fries

Method
 

  1. Preheat oven to 425°F. Toss fries with oil, salt, and pepper. Bake for 25–30 minutes until crispy.
  2. Season steak generously with salt and pepper.
  3. Heat olive oil in skillet over medium-high. Sear steak 3–4 minutes per side.
  4. Add butter, garlic, and herbs. Baste steaks for 1–2 minutes.
  5. Rest steak 5 minutes. Serve with fries.

Notes

  • Use a meat thermometer for perfect doneness.
  • You can air-fry the fries instead of baking.
  • Serve with garlic aioli or herb butter.
