Step-by-Step Instructions for Steak Cheese Quesadillas
  1. Preheat your Blackstone grill to medium-high heat, aiming for around 400°F. Drizzle vegetable oil to coat the surface.
  2. Sauté diced skirt steak and onions directly on the grill for 4 to 8 minutes per side, seasoning with onion powder, salt, and black pepper.
  3. Push the cooked steak and onions to one side. Lower the temperature to medium and place flour tortillas on the other side to warm them for 1-2 minutes.
  4. Layer each warmed tortilla with mozzarella and Monterey Jack cheeses, followed by the cooked steak and onions, then a sprinkle of extra cheese.
  5. Fold each tortilla in half and cook for 1 to 2 minutes on each side until golden-brown and crispy.
