- Cook the shell pasta in a large pot of salted water according to package instructions until al dente, about 8-10 minutes. Reserve ½ cup of pasta water before draining.
- Pat the steak dry and season generously with salt and pepper. In a large skillet, heat olive oil over medium-high heat and sear steak bites for 2-3 minutes per side until browned.
- Lower the heat and melt butter in the same skillet. Add minced garlic and sauté for about 1 minute until fragrant.
- Gradually pour in the heavy cream, stirring as it simmers. Whisk in grated Parmesan until the sauce is smooth. Season with salt and pepper as needed.
- Add the cooked pasta to the skillet and toss to coat in the sauce. Add reserved pasta water if the sauce is too thick.
- Plate the pasta and top with steak bites, garnish with parsley if desired, and serve immediately.
