These Leprechaun Bites are tiny, buttery, and irresistibly delicious—perfect for celebrating St. Patrick’s Day! Ingredients
  

  • ½ cup unsalted butter at room temperature
  • ¼ cup granulated sugar
  • ¼ teaspoon almond or vanilla extract
  • cups all-purpose flour
  • ¼ teaspoon salt
  • 4 to 6 drops green gel food coloring
  • 4 teaspoons St. Patrick’s Day-themed sprinkles green, yellow, orange

Method
 

  1. Preheat & Prep: Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. Cream Butter & Sugar: In a bowl, beat butter, sugar, and extract until smooth and fluffy.
  3. Add Dry Ingredients: Mix in flour and salt until dough is crumbly.
  4. Color & Sprinkle: Add green food coloring, then stir in sprinkles until evenly distributed.
  5. Shape & Cut: Press dough into a flat rectangle and cut into ½-inch squares.
  6. Bake: Place squares on a baking sheet and bake for 13-15 minutes or until edges are lightly golden.
  7. Cool & Serve: Let cookies cool before serving. Enjoy these festive treats!
