  • 1 cup Spinach fresh or frozen, thawed and drained
  • 1 1/2 cups Whole Wheat Flour or gluten-free all-purpose flour
  • 2 teaspoons Baking Powder ensure freshness
  • 1 medium Banana ripe for optimal flavor
  • 1/3 cup Honey or Maple Syrup adjust for sweetness preference
  • 2 large Eggs bind ingredients together
  • 1/4 cup Milk or plant-based alternative
  • 1 teaspoon Vanilla Extract
For the Decoration
  • 1 cup Googly Eyes Candies for decoration
  • 1/2 cup Chocolate Chips optional

Method
 

Preparation Steps
  1. Preheat the oven to 350°F (175°C). Line muffin tins with liners or spray with cooking spray.
  2. Blend the spinach with 1/4 cup of milk until smooth. Set aside to thicken.
  3. In a large bowl, whisk together the whole wheat flour and baking powder until combined.
  4. In a separate bowl, mash the banana and mix in the honey, eggs, vanilla, and spinach mixture.
  5. Fold the wet mixture into the dry ingredients until just combined, being careful not to overmix.
  6. If using chocolate chips, fold them into the batter, then fill muffin tins 3/4 full.
  7. Bake for 20-25 minutes until a toothpick comes out clean. Let cool for 5 minutes, then transfer to a wire rack.
  8. Decorate with googly eyes and enjoy!
