Preparation Steps
- Preheat the oven to 350°F (175°C). Line muffin tins with liners or spray with cooking spray.
- Blend the spinach with 1/4 cup of milk until smooth. Set aside to thicken.
- In a large bowl, whisk together the whole wheat flour and baking powder until combined.
- In a separate bowl, mash the banana and mix in the honey, eggs, vanilla, and spinach mixture.
- Fold the wet mixture into the dry ingredients until just combined, being careful not to overmix.
- If using chocolate chips, fold them into the batter, then fill muffin tins 3/4 full.
- Bake for 20-25 minutes until a toothpick comes out clean. Let cool for 5 minutes, then transfer to a wire rack.
- Decorate with googly eyes and enjoy!
