- Select a ripe, seedless watermelon and slice it into strips about 0.5 inches thick, 1.5 inches wide, and 4 inches long.
- Coat each watermelon strip with freshly squeezed lime juice using a brush or spoon.
- Sprinkle Tajín seasoning over each strip, adjusting based on your spice preference.
- Place the seasoned watermelon strips onto dehydrator trays and dehydrate at 165°F for 12-16 hours.
- If using an oven, preheat to 250°F and lay the strips on wire racks, baking for 3-5 hours.
- Once dehydrated, let the jerky cool for a few minutes and store it in an airtight container.
