- In a large mixing bowl, combine chicken thighs with soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Mix thoroughly and marinate for at least 30 minutes.
- While marinating, whisk together remaining soy sauce, honey, rice vinegar, sriracha, and water in a small bowl to create the sauce. Set aside.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add marinated chicken and cook for 5 to 7 minutes until golden brown. Remove and keep warm.
- In the same skillet, add another tablespoon of olive oil and sauté onions, red and yellow bell peppers, minced garlic, and grated ginger for 5 to 7 minutes until tender-crisp.
- Return cooked chicken to the skillet, pour the sauce over and stir to combine. Simmer for 3 to 5 minutes until sauce thickens.
- Serve hot over cooked rice, garnished with sliced green onions and sesame seeds.
