Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine chicken thighs with soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Mix thoroughly and marinate for at least 30 minutes.
  2. While marinating, whisk together remaining soy sauce, honey, rice vinegar, sriracha, and water in a small bowl to create the sauce. Set aside.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add marinated chicken and cook for 5 to 7 minutes until golden brown. Remove and keep warm.
  4. In the same skillet, add another tablespoon of olive oil and sauté onions, red and yellow bell peppers, minced garlic, and grated ginger for 5 to 7 minutes until tender-crisp.
  5. Return cooked chicken to the skillet, pour the sauce over and stir to combine. Simmer for 3 to 5 minutes until sauce thickens.
  6. Serve hot over cooked rice, garnished with sliced green onions and sesame seeds.
