Ingredients
  

  • 1 lb 450g boneless, skinless chicken breasts or thighs
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 jalapeño thinly sliced (remove seeds for less heat)
  • 1 cup fresh or canned peaches diced
  • 2 table spoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon red pepper flakes optional
  • ¼ cup chicken broth or water
  • 1 teaspoon cornstarch mixed with 1 tablespoon water slurry
  • 1 tablespoon butter for extra richness
  • 2 green onions chopped (for garnish)

Method
 

  1. Season the Chicken – Sprinkle chicken with salt, black pepper, and paprika.
  2. Sear the Chicken – Heat olive oil in a pan over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown. Remove and set aside.
  3. Make the Sauce – In the same pan, sauté onion, garlic, and jalapeño until fragrant. Add peaches, honey, soy sauce, apple cider vinegar, red pepper flakes, and chicken broth. Simmer for 3-4 minutes.
  4. Thicken the Sauce – Stir in the cornstarch slurry and butter, then cook until the sauce thickens slightly.
  5. Combine & Serve – Return the chicken to the pan, coating it in the sauce. Let it cook for another 2-3 minutes until fully glazed. Garnish with green onions and serve hot.

Notes

  • Adjust the spice level by adding more or less jalapeño and red pepper flakes.
  • Use fresh or frozen peaches for the best flavor, but canned peaches work too.
  • For extra depth, add a splash of bourbon or whiskey to the sauce.
  • Pairs well with rice, mashed potatoes, or roasted veggies.
