  • 1 pound ground chicken
  • 1 tablespoon chipotle in adobo sauce minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 hamburger buns
  • 1 cup lettuce shredded
  • 1 tomato sliced
  • 1/2 cup pepper jack cheese shredded
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice

Method
 

  1. In a large bowl, combine the ground chicken, minced chipotle, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until well combined, but do not overwork the meat.
  2. Divide the mixture into four equal portions and shape them into patties. Make a slight indentation in the center of each patty to prevent them from puffing up while cooking.
  3. Heat olive oil in a skillet over medium heat. Once hot, add the patties and cook for about 5-6 minutes on each side or until the internal temperature reaches 165°F.
  4. During the last minute of cooking, place a slice of pepper jack cheese on each patty to melt.
  5. While the burgers are cooking, mix the mayonnaise and lime juice in a small bowl.
  6. Toast the hamburger buns lightly on a separate skillet or in a toaster.
  7. Assemble the burgers by spreading the lime mayo on the bottom bun, adding the lettuce, followed by the chicken patty, tomato slice, and finally the top bun.
