Preheat Air Fryer:Preheat air fryer to 375°F (190°C) for 3 minutes.
Cook Chicken:Lightly spray air fryer basket with cooking spray. Place chicken thighs in a single layer. Air fry for 12-14 minutes, flipping halfway, until crispy and cooked through (internal temperature should reach 165°F/74°C).
Make Soy Garlic Sauce:In a small saucepan, combine soy sauce, honey, rice vinegar, garlic, ginger, and 1 tablespoon water. Bring to a simmer over medium heat. Stir in cornstarch and cook until sauce thickens, about 1-2 minutes.
Coat Chicken:Remove chicken from air fryer and brush generously with the soy garlic sauce.
Garnish & Serve:Sprinkle with sesame seeds and sliced green onions. Serve hot with steamed rice or a side of veggies.
