Ingredients
  

  • 2 cups cooked chicken cubed
  • 1 cup corn kernels
  • 1 cup black beans rinsed
  • 1/2 cup cherry tomatoes halved
  • 1 avocado diced
  • 1/4 cup red onion chopped
  • 1/4 cup shredded cheddar cheese
  • 2 cups chopped romaine or mixed greens
  • 1/4 cup chipotle ranch or spicy ranch dressing

Method
 

  1. In a large bowl, layer lettuce, beans, corn, tomatoes, chicken, cheese, onion, and avocado.
  2. Drizzle with dressing and toss before serving.
