  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine the cubed sweet potatoes with extra virgin olive oil, ground cinnamon, and ground nutmeg in a large bowl.
  3. Spread the tossed sweet potatoes in a single layer and roast for 50-60 minutes until fork-tender.
  4. Reduce oven temperature to 375°F (190°C) and prepare a greased 9x13 baking dish.
  5. Blend roasted sweet potatoes with almond milk, vanilla extract, brown sugar, maple syrup, ground cinnamon, nutmeg, allspice, soaked raisins, and marshmallows.
  6. Transfer the sweet potato mixture into the greased baking dish and dot with unsalted butter.
