Servings: 24 cookies
Course: Dessert
Cuisine: American

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract

Method

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large mixing bowl, beat the softened butter and sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, then mix in the vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat the oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface and cut into desired shapes.
  7. Place cookies on a lined baking sheet and bake for 8-10 minutes, or until the edges are lightly golden.
  8. Let cookies cool for a few minutes on the baking sheet before transferring to a wire rack.

Notes

  • Chill the dough to prevent spreading and for easier handling.
  • For a softer cookie, bake until just set without browning the edges.
  • Decorate with royal icing, buttercream, or a sprinkle of sugar before baking.
  • Store in an airtight container at room temperature for up to a week.
