Step-by-Step Instructions for Ube Brownies
  1. Preheat your oven to 180°C (350°F). Grease an 8-inch baking pan and line it with parchment paper.
  2. Melt 1/2 cup of unsalted butter in the microwave for 30 to 50 seconds.
  3. Stir in 3/4 cup each of light brown sugar and white sugar until smooth for 1-2 minutes.
  4. Add 1 large egg and 1 teaspoon of ube extract, beat until smooth for 1-2 minutes.
  5. Sift in 1/2 cup of all-purpose flour and 2 tablespoons of cornstarch, fold gently until just combined.
  6. Add a pinch of salt and 1/2 cup of white chocolate chips, fold until evenly distributed.
  7. Pour the brownie batter into the prepared baking pan and smooth the top.
  8. Bake for 20-25 minutes until the edges look set and the center has a slight wobble.
  9. Let the ube brownies cool completely in the pan for 30-45 minutes before cutting into squares.
