Step-by-Step Instructions
  1. Start by coating the beef chuck in a mixture of flour, salt, and pepper inside a resealable bag. In a large Dutch oven, heat olive oil over medium-high heat until shimmering. Brown the coated beef in batches for about 4-5 minutes per side until it develops a rich, golden crust, then remove from heat.
  2. Transfer the browned beef to your slow cooker and add in the onion, chopped carrots, celery, garlic, thyme, rosemary, paprika, bay leaf, tomato paste, yellow potatoes, and Worcestershire sauce. Pour in the pale ale and beef broth, ensuring the ingredients are well combined.
  3. Cover the slow cooker and set it to low; let your stew cook undisturbed for about 6 hours.
  4. After cooking time, remove the bay leaf and whisk together cornstarch or additional flour with a bit of broth or water to create a slurry. Stir this mixture into the slow cooker and let it cook on high for an additional 20-30 minutes, or until the broth thickens.
  5. Allow the stew to rest for about 15-30 minutes before serving.
