Slow Cooker Chicken and Rice is a simple, delicious meal.

Ingredients
  

  • 4 boneless chicken thighs
  • 1 cup uncooked long grain rice
  • 1 3/4 cups chicken broth
  • 1 can cream of chicken soup
  • 1 small onion diced
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Spray crockpot with non-stick spray.
  2. Place rice, broth, soup, onion, and seasonings in the crockpot. Stir well.
  3. Place chicken on top of the rice mixture.
  4. Cook on low for 5-6 hours until rice is tender and chicken is cooked through.
  5. Stir gently, garnish with parsley, and serve.

Notes

  • Avoid using instant rice. For extra creaminess, stir in some shredded cheese at the end.
