Step-by-Step Instructions
  1. Cook Pasta: Bring a large pot of salted water to a boil and cook your fettuccine or linguine for 8-10 minutes until al dente. Reserve a cup of pasta water, then drain and set aside.
  2. Sauté Aromatics: In a skillet, heat olive oil over medium heat, sauté the chopped onion for 3-4 minutes, then add minced garlic and bell pepper. Cook for another 2-3 minutes until tender.
  3. Cook Shrimp: Increase heat to medium-high, add shrimp, season with salt, pepper, and jerk seasoning. Cook for 3-4 minutes until shrimp is pink and opaque.
  4. Make Sauce: Stir in coconut milk and lime juice, simmer for 3-5 minutes. Use reserved pasta water to adjust the sauce's thickness.
  5. Combine: Add cooked pasta to the skillet, toss gently with shrimp and sauce, heat through for 2 minutes.
  6. Serve: Transfer to bowls, garnish with cilantro and serve immediately with lime wedges.
