Ingredients
  

  • 1 lb 450g boneless, skinless chicken breast or thighs, cut into thin strips
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger minced
  • 4-5 scallions cut into 2-inch pieces
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • ½ teaspoon black pepper
  • ¼ cup chicken broth or water
  • 1 teaspoon cornstarch mixed with 2 tablespoons water slurry
  • Sesame seeds for garnish

Method
 

  1. Prepare the Chicken – Toss the chicken with cornstarch until evenly coated.
  2. Sear the Chicken – Heat vegetable oil in a pan over medium-high heat. Cook the chicken for 4-5 minutes until golden brown and fully cooked. Remove and set aside.
  3. Sauté the Aromatics – In the same pan, add a little more oil if needed and sauté garlic, ginger, and scallions for about 30 seconds until fragrant.
  4. Make the Sauce – Stir in soy sauce, oyster sauce, sugar, sesame oil, black pepper, and chicken broth. Let it simmer for 2 minutes.
  5. Thicken the Sauce – Stir in the cornstarch slurry and cook until the sauce slightly thickens.
  6. Combine & Serve – Return the cooked chicken to the pan and toss it in the sauce. Serve hot, garnished with sesame seeds.

Notes

  • For extra flavor, marinate the chicken in a little soy sauce and cornstarch for 10 minutes before cooking.
  • Adjust the saltiness by using low-sodium soy sauce if needed.
  • For a spicier version, add red pepper flakes or a drizzle of chili oil
  • Best served fresh, but leftovers can be stored in the fridge for up to 3 days.
