- Preheat your oven to 300°F (150°C) and cut the day-old bread into cubes. Toast the bread for about 10–12 minutes.
- In a large skillet, melt unsalted butter and sauté chopped onion, celery, and minced garlic for 6–8 minutes until tender.
- In a large bowl, combine toasted bread cubes with sautéed vegetables. Add poultry seasoning, salt, and pepper. Fold in eggs and broth.
- Form the mixture into 2-inch balls and place them on a greased baking sheet, leaving space between each. Chill for 30 minutes if desired.
- Increase oven temperature to 375°F (190°C) and bake for 20–25 minutes until golden brown and crispy.
