- In a large bowl, combine the ground turkey, breadcrumbs, green onions, cilantro, garlic, ginger, soy sauce, lime juice, sesame oil, salt, and pepper. Mix until just combined.
- Divide the mixture into four equal portions and shape each into a ¾-inch thick patty with an indentation in the center.
- Preheat your grill or skillet over medium-high heat for about 5 minutes, adding oil if using a skillet.
- Place the patties on the hot grill or skillet, cooking for 5-6 minutes on one side until golden brown, then flip and cook for another 5-6 minutes until they reach 165°F (74°C).
- While patties are cooking, whisk together peanut butter, soy sauce, lime juice, honey, and sriracha. Add warm water if needed for a smooth consistency.
- Assemble the burgers by spreading peanut sauce on the bottom of each bun, adding a patty, more peanut sauce, and your choice of toppings before placing the top bun.
- Serve immediately while hot with extra peanut sauce on the side.
