Step-by-Step Instructions
  1. In a large bowl, combine beef chunks with curry powder, chili powder, turmeric, vinegar, and salt. Mix thoroughly and let marinate for at least 30 minutes.
  2. Heat coconut oil in a Dutch oven over medium heat. Add onions, garlic, ginger, curry leaves, and cinnamon stick. Sauté for 5-6 minutes until onions are golden.
  3. Add marinated beef chunks to the Dutch oven and brown on all sides for about 8-10 minutes.
  4. Pour in coconut milk and water, scraping the bottom to loosen browned bits. Bring to a gentle boil then reduce heat to low.
  5. Cover and let simmer for 1.5 to 2 hours, checking occasionally.
  6. Adjust salt to taste and remove the cinnamon stick before serving.
  7. Serve hot over basmati or jasmine rice, or with roti or coconut flatbreads.
