Ingredients
  

For the Meatballs
  • 1 lb Ground Beef or ground turkey or plant-based meat
  • 1 cup Bread Crumbs gluten-free if needed
  • 1/4 cup Parsley freshly chopped
  • 1/4 cup Parmesan freshly grated or nutritional yeast
  • 1 large Egg or flaxseed meal for vegan option
  • 2 cloves Garlic Cloves minced or garlic powder
  • 1 tsp Kosher Salt
  • 1/2 tsp Black Pepper
For the Sauce
  • 2 tbsp Olive Oil or canola/vegetable oil
  • 1 medium Onion finely chopped
  • 28 oz Crushed Tomatoes canned or fresh
  • 1 leaf Bay Leaf
  • 1/2 tsp Red Pepper Flakes to taste

Method
 

Cooking Instructions
  1. Cook pasta according to package directions until al dente, about 8-10 minutes. Drain and set aside.
  2. In a bowl, mix ground beef, bread crumbs, parsley, parmesan, egg, garlic, salt, and pepper. Shape into 16 meatballs.
  3. Heat oil in a skillet, add meatballs, and brown for 5-7 minutes on all sides. Transfer to a plate.
  4. In the same skillet, sauté onion until softened. Add crushed tomatoes, bay leaf, salt, and pepper, simmer for 5 minutes.
  5. Return meatballs to the sauce, cover, and simmer for 8-10 minutes until sauce thickens. Serve over spaghetti.
