Method
- Season the roast generously with salt and pepper.
- In a skillet, heat olive oil over medium-high and sear the roast on all sides until browned.
- Place roast in the slow cooker. Add carrots, potatoes, onion, and garlic.
- Pour in beef broth and Worcestershire sauce, then sprinkle thyme and rosemary over the top.
- Cover and cook on low for 8–9 hours or on high for 4–5 hours until meat is tender.
- Slice and serve with vegetables and spoonfuls of the broth.
Notes
- Browning the roast adds rich flavor—don’t skip this step if you have time.
- Add celery or parsnips for more veggie variety
