- In a small bowl, mix garlic powder, onion powder, paprika, thyme, salt, and pepper.
- Rub seasoning blend all over the chicken thighs.
- Heat olive oil in a skillet over medium-high heat. Sear chicken thighs skin-side down for 3–4 minutes until golden brown.
- Transfer chicken to the crockpot. Pour in chicken broth around the sides.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and cooked through.
- Garnish with fresh parsley before serving.
Notes
- You can skip searing for a more hands-off approach, but browning adds flavor and crispness. For extra moisture, add sliced onions or lemon wedges under the chicken. This pairs well with mashed potatoes or roasted veggies.
