Ingredients
  

  • 1 pound large raw shrimp peeled and deveined
  • 2 tablespoons chili powder adjust based on heat preference
  • 1 teaspoon salt modify according to dietary needs
  • 2 tablespoons olive oil or preferred cooking oil
  • 2 tablespoons salted butter or unsalted for more control over seasoning
  • 1 medium chopped onion yellow or white varieties
  • 3 cloves minced garlic fresh
  • 2 cups cooked corn kernels fresh corn recommended
  • 1 teaspoon smoked paprika or regular paprika
  • 1 cup half-and-half or use heavy cream for a richer sauce
  • 4 ounces feta cheese crumbled
  • 1 whole fresh lime for juice
  • 1/4 cup chopped cilantro optional

Method
 

  1. Heat 2 tablespoons of olive oil in a 12-inch skillet over medium heat. Add the seasoned shrimp and cook for 3-4 minutes until pink and opaque. Remove and set aside.
  2. In the same skillet, melt 2 tablespoons of salted butter and sauté 1 chopped onion for 4 minutes. Add 3 minced garlic cloves and cook for an additional 2 minutes.
  3. Stir in 2 cups of cooked corn kernels and 1 teaspoon of smoked paprika. Allow to heat through for about 2 minutes.
  4. Pour in 1 cup of half-and-half and bring to a simmer. Add 4 ounces of crumbled feta and stir until melted and creamy.
  5. Squeeze the juice of half a lime into the sauce and return the shrimp to the skillet. Gently reheat for 1-2 minutes and garnish with additional corn, lime slices, and chopped cilantro.
