- Heat 2 tablespoons of olive oil in a 12-inch skillet over medium heat. Add the seasoned shrimp and cook for 3-4 minutes until pink and opaque. Remove and set aside.
- In the same skillet, melt 2 tablespoons of salted butter and sauté 1 chopped onion for 4 minutes. Add 3 minced garlic cloves and cook for an additional 2 minutes.
- Stir in 2 cups of cooked corn kernels and 1 teaspoon of smoked paprika. Allow to heat through for about 2 minutes.
- Pour in 1 cup of half-and-half and bring to a simmer. Add 4 ounces of crumbled feta and stir until melted and creamy.
- Squeeze the juice of half a lime into the sauce and return the shrimp to the skillet. Gently reheat for 1-2 minutes and garnish with additional corn, lime slices, and chopped cilantro.
