  • 1 can 14.75 ounces pink salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 1/4 cup mayonnaise
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1 large egg
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying
  • Lemon wedges for serving

Method
 

  1. In a large bowl, combine the flaked salmon, breadcrumbs, mayonnaise, onion, bell pepper, egg, Dijon mustard, garlic powder, salt, and black pepper. Mix until well combined.
  2. Form the mixture into patties, about 2-3 inches in diameter. You should have about 8 patties.
  3. Heat the olive oil in a large skillet over medium heat. Once hot, add the salmon patties to the skillet, cooking in batches if necessary.
  4. Cook the patties for about 4-5 minutes on each side or until golden brown and cooked through.
  5. Remove the patties from the skillet and place them on a paper towel-lined plate to drain excess oil.
  6. Serve warm with lemon wedges on the side.
