  • 2 cups Japanese Short Grain Rice Sushi rice is recommended.
For the Protein
  • 2 cups Chicken Thighs Cut into bite-sized pieces.
For the Eggs
  • 4 large Eggs Adjust cooking time for preferred yolk consistency.
For the Broth
  • 2.5 cups Dashi Broth Use instant dashi powder or make your own.
  • 2 tablespoons Soy Sauce Adjust according to taste.
  • 1 tablespoon Mirin Can substitute with honey or sweet rice vinegar.
  • 1 tablespoon Sake Omit for a non-alcoholic version.
For the Garnish
  • 2 tablespoons Chopped Green Onions Chives can be used instead.

Step-by-Step Instructions
  1. Rinse the rice under cold water until the water runs clear and soak in fresh water for 30 minutes.
  2. Combine the soaked rice with dashi broth, soy sauce, mirin, and sake in the rice cooker.
  3. Layer the chicken evenly on top of the rice mixture.
  4. Close the lid and cook for 25-30 minutes until done.
  5. Beat the eggs in a bowl and drizzle over the rice and chicken mixture.
  6. Close the lid and steam or cook for an additional 10 minutes.
  7. Fluff the rice and chicken, serve in bowls, and sprinkle with green onions.
