Ingredients
  

For the Chicken Marinade
  • 1 pound chicken breast can substitute with chicken thighs
  • ¼ cup olive oil use extra virgin for best flavor
  • 3 tablespoons lemon juice can substitute with lime juice
  • 4 cloves garlic freshly minced is best
  • 1 tablespoon dried oregano fresh oregano works beautifully
  • 1 teaspoon paprika smoked paprika enhances flavor
  • to taste salt
  • to taste pepper
  • pinch red pepper flakes omit for milder tacos
For the Fresh Salsa
  • 1 cup cucumbers diced
  • 1 cup tomatoes diced
  • 1 whole bell pepper diced
  • ½ cup red onion finely diced
  • ¼ cup parsley chopped
  • 1 tablespoon lemon juice
  • to taste salt
  • to taste pepper
For the Assembly
  • 4 pieces pitas or tortillas
  • 1 cup tzatziki sauce homemade or store-bought

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, salt and pepper.
  2. Cut chicken breast into bite-sized chunks and add to the marinade, tossing well to coat. Marinate in the refrigerator for at least 15-45 minutes.
  3. In a large bowl, combine diced cucumbers, tomatoes, bell pepper, red onion, chopped parsley, lemon juice, salt, and pepper.
  4. Heat a large skillet or grill pan over medium-high heat. Add marinated chicken to the skillet and cook for 3-5 minutes on each side until fully cooked.
  5. Warm the pitas on a skillet or directly over a flame until soft and pliable.
  6. Assemble tacos by placing chicken inside each pita, adding fresh salsa, and drizzling with tzatziki sauce.
