For the Meatballs
  • 1 lb Ground Beef can substitute with ground turkey
  • 2 cloves Garlic (minced) use fresh for best flavor
  • 1 tbsp Ginger (grated) can substitute with ground ginger (1/4 tsp)
  • 3 tbsp Green Onions (finely chopped) shallots can be used as an alternative
  • 1 large Egg for egg-free, omit or use a flaxseed egg
  • 1 cup Breadcrumbs can use crushed gluten-free crackers
  • 1 tbsp Soy Sauce tamari is a gluten-free alternative
  • 1 tbsp Sesame Oil olive oil can also be used
  • 1 tbsp Gochujang substitute with sriracha for milder spice
  • 1 tbsp Brown Sugar coconut sugar can be a natural alternative
  • 1 tbsp Rice Vinegar white vinegar can also be used
For the Spicy Mayo Dip
  • 1/2 cup Mayonnaise consider Greek yogurt for a lighter twist
  • 1 tbsp Lime Juice can replace with lemon juice
  • 1 tbsp Honey maple syrup serves as a vegan substitute

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine ground beef, minced garlic, grated ginger, chopped green onions, and egg in a mixing bowl.
  3. Add breadcrumbs, soy sauce, sesame oil, gochujang, brown sugar, rice vinegar, salt, and pepper; mix gently.
  4. Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  5. Bake for 18-20 minutes until browned and cooked to an internal temperature of 160°F (71°C).
  6. Whisk together mayo, gochujang, lime juice, and honey for the dip while the meatballs bake.
  7. Let the meatballs cool slightly before serving with the spicy mayo dip.
