Step-by-Step Instructions
- In a large mixing bowl, combine the ground pork, finely chopped kimchi, shredded yellow onion, minced garlic, and grated ginger. Add soy sauce, rice wine, beaten egg, sesame oil, and season with salt and pepper. Mix thoroughly for about 2-3 minutes.
- Cover the bowl with plastic wrap and refrigerate for at least 20 minutes to allow the flavors to meld.
- Prepare dumpling wrappers on a clean surface, moistening the edges of each with water to ensure a good seal.
- Place a tablespoon of filling in the center of each wrapper. Fold in half and pinch edges tightly to seal, forming pleats if desired.
- To cook, heat oil in a large frying pan over medium heat. Pan-fry dumplings for 4-5 minutes until golden brown. Add water, cover, and steam for 5 minutes.
- Transfer cooked dumplings to a platter, garnish, and serve warm with your favorite dipping sauce.

Notes
Keep wrappers covered with a damp cloth to prevent drying. Marinating the filling enhances the flavor significantly. Extra dumplings can be frozen for later use.
