Ingredients
  

Chicken
  • 1.5 lb Chicken Breasts Diced
  • 1 tsp Paprika Substitute smoked paprika or cayenne for a different flavor
  • 1 tsp Garlic Powder Can swap for minced garlic
  • 1 tsp Dried Oregano Thyme or basil can also work
  • ¼ tsp Red Pepper Flakes Omit for a milder dish
  • to taste Salt Essential for enhancing taste
  • to taste Black Pepper Adds heat and depth
Rice & Vegetables
  • 2 cups Basmati Rice Cooked
  • 3 tbsp Olive Oil For frying; can substitute with avocado or coconut oil
  • 1 cup Cherry Tomatoes Halved
  • 6 cloves Garlic Minced
  • 1 cup Spinach Can substitute with kale or arugula
  • 15 oz Chickpeas Canned, drained
  • 1 whole Lemon Juiced
Finish
  • 1 cup Feta Cheese Crumbled, offers creaminess and tang
  • 2 tbsp Fresh Dill Chopped, can substitute with parsley
  • to taste Lemon wedges For garnish

Method
 

Preparation
  1. In a small bowl, combine 1 teaspoon of paprika, 1 teaspoon of garlic powder, 1 teaspoon of dried oregano, ¼ teaspoon of red pepper flakes, and a pinch of salt and black pepper. Mix until well-blended.
  2. In a large bowl, toss the chicken with the prepared spice mix and marinate for about 10 minutes.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add marinated chicken and sear for approximately 4 minutes on each side until golden brown and cooked through.
  4. In the same skillet, add another tablespoon of olive oil and heat. Add cherry tomatoes, minced garlic, oregano, and a pinch of salt and pepper. Sauté for about 2 minutes.
  5. Add fresh spinach to the skillet and cook for an additional 2 minutes until wilted.
  6. Stir in the cooked basmati rice and drained chickpeas, squeezing the lemon juice over the mixture. Mix gently and heat for 2-3 minutes.
  7. Return the seared chicken to the skillet and add half of the crumbled feta cheese, warm through for 2 minutes.
  8. Garnish with remaining feta and dill, and serve hot with lemon wedges.
