  • 2 ears Yellow Sweet Corn Boil briefly before charring
  • 1 medium Zucchini Slice and grill
  • 4 cups Spring Mix Can substitute with spinach
  • 1 cup Arugula Adds a peppery kick
  • 2 heads Endive Heads Core and chop
  • 1 cup Petit Medley Grape Tomatoes Halve them
  • 4 stalks Green Onions Slice thinly
  • 1 medium Shallot Slice thinly
  • 2 tbsp Basil Mince finely
  • 2 tbsp Parsley Mince finely
  • 2 cloves Garlic Use fresh cloves
  • 1 tbsp Lemon Zest For added brightness
  • 1 pinch Crack of Black Pepper To taste
  • 4 oz Gorgonzola Cheese
For the Dressing
  • 1/4 cup Balsamic Vinegar Use high-quality
  • 1/2 cup Olive Oil Extra virgin recommended
  • 2 cloves Garlic Minced
  • 1 tbsp Dijon Mustard Adjust to taste

Method
 

Step-by-Step Instructions
  1. Prepare the marinade by combining olive oil, minced garlic, and black pepper in a mixing bowl. Marinade the steak for at least 30 minutes.
  2. Preheat grill to medium-high heat (400°F). Grill the steak for 4-6 minutes on each side until it reaches medium doneness, about 130°F.
  3. Boil the corn for 5-7 minutes until tender. Grill to char the corn, rotating until it has grill marks, about 3-5 minutes.
  4. Slice zucchini into half-inch rounds. Grill the zucchini for about 3-4 minutes per side until golden.
  5. In a large bowl, mix together the spring mix, arugula, chopped endive, halved grape tomatoes, green onions, and shallot.
  6. On a serving platter, layer the mixed greens, distribute sliced grilled steak over the salad, and sprinkle gorgonzola cheese on top.
  7. Combine the dressing ingredients in a mason jar and shake to emulsify. Drizzle over the salad or serve on the side.
  8. Serve immediately and enjoy fresh.
