  • 1 pound Medium Shrimp Peeled and deveined.

Garnishes
  • 1/4 cup Fresh Cilantro Chopped.

Step-by-Step Instructions
  1. Prepare Plantains: Peel and cut plantains into 1-2 inch pieces. Boil in salted water for 10-15 minutes.
  2. Mash Mofongo: Drain plantains, mash with garlic, oil, and optional pork cracklings until chunky.
  3. Cook Garlic Shrimp: Sauté garlic in oil, then add shrimp, cooking for 3-4 minutes per side until pink.
  4. Assemble Dish: Mold mofongo onto plates, top with shrimp and pan juices.
  5. Serve Immediately: Garnish with cilantro and lime juice.
