- Start by generously seasoning your beef chuck roast with kosher salt and black pepper. Sear in olive oil for 1-2 minutes on each side until browned. Remove and let rest.
- Place the seared beef chuck roast into your slow cooker with pan drippings.
- Sprinkle the dry onion soup mix over the beef. Pour in water and beef broth to cover the meat.
- Cover and cook on HIGH for 4-6 hours or LOW for 8-10 hours until fork-tender.
- Remove the beef and shred using two forks. Keep warm.
