Ingredients
  

For the Homemade Noodles
  • 3 cups high-protein flour
  • 1 cup water room temperature
  • 1 tsp salt for flavor
For the Lamb Marinade
  • 1 lb lamb well-marbled cut
  • 1 tbsp Shaoxing wine
  • 1 tsp salt
  • 2 tsp peanut oil or vegetable oil
  • 2 tsp cornstarch optional
For the Spice Blend
  • 2 tbsp whole cumin seeds toasted
  • 2 tsp Sichuan peppercorns toasted
  • 1 tsp whole coriander seeds toasted
For the Sauce
  • 1/2 cup homemade chili oil adjust to taste
  • 3 tbsp Chinkiang vinegar
  • 4 tsp light soy sauce or tamari for gluten-free
  • 4 tsp dark soy sauce sub more light soy if needed
For the Stir-Fry
  • 8 cloves garlic minced
  • 2 inches ginger fresh, grated
  • 1 medium red onion sliced
  • 1 medium hot green chili diced
  • 1/2 bunch cilantro for garnish

Method
 

Step-by-Step Instructions
  1. Combine flour, salt, and water in a bowl. Knead the dough for 10 minutes and let it rest for 30 minutes.
  2. Toast cumin seeds, Sichuan peppercorns, and coriander seeds for 3-4 minutes. Grind into a coarse powder.
  3. Marinate lamb with wine, salt, oil, and cornstarch for 15 minutes.
  4. Heat oil in a skillet, sear lamb for 3-4 minutes. Add garlic and ginger, cook for 1 minute.
  5. Add onion and chili, stir-fry for 2-3 minutes. Add spice mix and sauces, cook for 1 minute.
  6. Cook hand-pulled noodles for 1-2 minutes in boiling water. Drain and set aside.
  7. Serve noodles topped with lamb and sauce, garnished with chili oil and cilantro.
