  • 1 cup Pineapple Juice You can use the juice from canned pineapple.
  • 1 can Chipotle Peppers in Adobo Sauce Start with 1 pepper and adjust as desired.
  • 1 medium Onion Yellow or white onions enhance flavor.
  • 4 cloves Garlic Fresh minced or pre-minced for convenience.
  • 2 cups Beef Broth Low-sodium versions keep it healthy.
  • 2 tablespoons Tomato Paste No substitutions.
  • 1/4 cup Soy Sauce Use tamari for gluten-free option.
  • 1 tablespoon Worcestershire Sauce Optional.
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika Regular paprika can replace smoked.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Pepper Adjust to taste.
  • 2 tablespoons Olive Oil Substitute with any preferred cooking oil.
For the Bowls
  • 3 cups Cooked Rice White, brown, or cauliflower.
  • 1 can Black Beans Rinse before using.
  • 1 cup Corn Fresh or frozen.
  • 1 medium Bell Pepper Red bell pepper for a pop of color.
  • 1 medium Avocado Best served fresh.

Method
 

Instructions
  1. Season and sear the beef, cooking until browned on both sides.
  2. Load the crockpot with beef, onions, garlic, chipotle, and pineapple.
  3. Mix pineapple juice, broth, tomato paste, soy sauce, Worcestershire sauce, cumin, and paprika in a bowl and pour over the crockpot ingredients.
  4. Cover and slow cook on low for 8-10 hours or high for 4-6 hours.
  5. Shred the beef and mix back into the sauce in the crockpot.
  6. Prepare the bowl ingredients while the beef soaks in the sauce.
  7. Assemble bowls with rice, beef, beans, corn, bell pepper, avocado, and cilantro.
