Method
- Heat oil in a large skillet or pot over medium heat. Add onion and garlic, cook until soft.
- Add cabbage, stir and cook for 10 minutes until softened.
- Stir in diced tomatoes, paprika, salt, and pepper. Simmer for 10 more minutes.
- Add cooked rice, stir well, and cook until heated through.
- Garnish with parsley and serve warm.
Notes
- Use brown rice or quinoa for extra fiber.
- For smoky depth, add a dash of liquid smoke or smoked paprika.
