  • 2 medium yellow bell peppers Orange bell peppers are a good alternative
  • 1 large red onion Other varieties of onion can be used
  • 1 medium eggplant Zucchini can be used as a substitute
  • 2 medium zucchini Summer squash can be used as an alternative
  • 8-10 spears asparagus Green beans can also be used
  • 8 ounces button mushrooms Portobello or shiitake mushrooms will enhance the flavor

Method
 

Preparation Steps
  1. In a jar, combine lemon juice, olive oil, sugar, minced garlic, salt, pepper, and dried herbs. Shake vigorously and let sit for 10 minutes.
  2. Wash and cut vegetables into appropriate sizes for grilling.
  3. Preheat the grill to high heat and brush the grates with olive oil.
  4. Toss the chopped vegetables with olive oil, salt, pepper, and minced garlic until evenly coated.
  5. Grill vegetables for 2-4 minutes on each side or until tender-crisp with grill marks. For oven use, roast for 20-25 minutes.
  6. Drizzle the marinade over hot vegetables and let sit for at least 10 minutes before serving.
