  1. Make the Sauce: In a medium measuring cup, whisk together maple syrup, coconut aminos, rice vinegar, and toasted sesame oil until well combined. Add a pinch of red pepper flakes for added heat, if desired.
  2. Cook Beef: Heat 1 tablespoon of olive oil or sesame oil in a large skillet over medium-high heat. Add 1 pound of ground beef and break it up with a spatula. Cook for about 5 minutes, stirring occasionally, until the beef is browned and no longer pink.
  3. Add Aromatics: Stir in minced garlic and grated ginger into the skillet. Cook for another 1-2 minutes, stirring often until fragrant.
  4. Sauté Vegetables: Add chopped red bell pepper and shredded carrots to the skillet. Sauté for 3-4 minutes, stirring frequently until the bell pepper softens but retains its color.
  5. Combine Sauce and Simmer: Pour the prepared sauce over the beef and vegetable mixture. Stir thoroughly and simmer for 2-3 minutes until thickened.
  6. Add Green Onions: Stir in chopped green onions just before serving, keeping heat on low.
  7. Serve: Spoon generous portions into crisp lettuce leaves and optionally garnish with sesame seeds. Serve alongside steamed white rice or cauliflower rice.
