  • 2 cups Water Adjust for desired thickness of the stew.
  • 3 tablespoons Cooking Oil Vegetable oil is recommended for a neutral flavor.
For Seasoning
  • 3 Long Green Chili Peppers Jalapeños can be used for more heat.
  • Fish Sauce Season to taste; soy sauce is a non-fish alternative.
  • Ground Black Pepper Adjust according to your spice preference.

Step-by-Step Instructions
  1. Heat the oil in a large pot over medium heat for about 2 minutes until it shimmers slightly.
  2. Sauté the chopped garlic for about 1-2 minutes until golden brown and fragrant.
  3. Add the sliced onion and crushed ginger, cooking for about 3-4 minutes until the onion is translucent.
  4. Add the chicken pieces in a single layer and sear for 1 minute on each side until light golden brown.
  5. Stir in half of the tomatoes and cook for about 2 minutes.
  6. Pour in the water and bring to a rolling boil.
  7. Once boiling, add the chicken cube and a splash of fish sauce, then reduce heat and simmer for 20 minutes.
  8. Add the remaining tomatoes, long green chili peppers, and bok choy; cover and cook for 3 more minutes.
  9. Taste and adjust seasonings with ground black pepper and fish sauce.
  10. Serve warm over steamed rice.
