Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Carefully slice the acorn squash in half lengthwise and scoop out the seeds and stringy flesh to create 'boats'.
  3. Place the squash halves cut side down on a baking sheet and roast for about 30 minutes.
  4. In a skillet over medium heat, cook the ground sausage until browned, about 6-8 minutes.
  5. Sauté diced onion for 2-3 minutes, then add diced apple and minced garlic, cooking for another 3 minutes.
  6. Stir in the panko breadcrumbs and half of the shredded Parmesan cheese, cooking for an additional 2-3 minutes until lightly toasted.
  7. Carefully fill each roasted squash half with the sausage and apple mixture, and top with remaining Parmesan cheese.
  8. Return to the oven and bake for an additional 15-20 minutes until the cheese is melted and golden brown.
