  • 1 large Sweet Potato Weigh after peeling
  • 1 can Chickpeas Drained and patted dry
  • 1 clove Garlic Finely grated
  • 1-2 Scallions/Green Onions Finely chopped
  • 4-5 tablespoons Cilantro/Fresh Coriander Finely chopped
  • 2.5 teaspoons Cajun Spice Mix Or Chipotle/Jerk seasoning
  • 2.5 teaspoons Tomato Puree Homemade adds a fresh twist
  • 1 teaspoon Miso Paste Optional but recommended
  • 0.25 teaspoon Cayenne Pepper Optional, adjust to taste
  • 2.5 tablespoons Olive Oil Used for frying
  • Fine Sea Salt Adjust to taste
  • Pepper Adjust to taste

  • 4 Burger Buns Toast for extra texture

Method
 

Cooking Instructions
  1. Peel and cube the sweet potatoes. In a non-stick pan, heat ½ tablespoon of olive oil over medium heat. Add sweet potatoes and Cajun spice mix, stirring for 10-12 minutes until browned and fork-tender.
  2. Transfer cooked sweet potatoes to a blender along with drained chickpeas, garlic, scallions, cilantro, tomato puree, miso paste, and cayenne pepper. Pulse until combined but chunky.
  3. Shape the mixture into four equal burger patties, pressing firmly to ensure they hold together.
  4. In the same pan, heat 1 tablespoon of olive oil over medium heat. Cook the burger patties for about 2 minutes on each side until golden brown.
  5. Transfer the cooked burgers to toasted burger buns and serve with your favorite toppings.
