  • 2 pieces Honeynut Squash halved and seeded
For the Filling
  • 1 pound Sweet Italian Sausage or turkey sausage
  • 1 cup Apple (tart variety) diced
  • 2 tablespoons Maple Syrup brown sugar can be used as a substitute
  • 1/2 cup Pecans/Walnuts optional for garnish
  • 1 tablespoon Fresh Thyme

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Halve the honeynut squash lengthwise and scoop out the seeds.
  3. Cook the sweet Italian sausage in a skillet over medium heat for about 6-8 minutes.
  4. Add the diced tart apples to the sausage and mix, sautéing for 3-4 minutes.
  5. Stir in the maple syrup and nuts (if using) into the sausage-apple mixture.
  6. Stuff each half of the honeynut squash with the sausage and apple mixture.
  7. Arrange the stuffed squash on a baking sheet with space between each half.
  8. Bake in the preheated oven for about 40-45 minutes, or until fork-tender.
  9. Serve warm, garnished with fresh thyme and extra nuts if desired.
