Preparation
- Preheat the oven to 400°F (200°C).
- Halve the honeynut squash lengthwise and scoop out the seeds.
- Cook the sweet Italian sausage in a skillet over medium heat for about 6-8 minutes.
- Add the diced tart apples to the sausage and mix, sautéing for 3-4 minutes.
- Stir in the maple syrup and nuts (if using) into the sausage-apple mixture.
- Stuff each half of the honeynut squash with the sausage and apple mixture.
- Arrange the stuffed squash on a baking sheet with space between each half.
- Bake in the preheated oven for about 40-45 minutes, or until fork-tender.
- Serve warm, garnished with fresh thyme and extra nuts if desired.
