- Butterfly and pound each chicken breast to 1/2 inch thickness.
- In a medium bowl, combine feta, spinach, sun-dried tomatoes, minced garlic, and optional red pepper flakes. Mix well.
- Season both sides of chicken breasts with salt, black pepper, garlic powder, oregano, and smoked paprika.
- Place filling at one end of each chicken breast. Roll tightly and secure with toothpicks.
- In a skillet, heat olive oil over medium-high heat. Sear chicken for 3-4 minutes until golden brown.
- Transfer skillet to the oven and bake for about 25 minutes until the chicken reaches an internal temperature of 165°F (75°C).
