Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Butterfly and pound each chicken breast to 1/2 inch thickness.
  3. In a medium bowl, combine feta, spinach, sun-dried tomatoes, minced garlic, and optional red pepper flakes. Mix well.
  4. Season both sides of chicken breasts with salt, black pepper, garlic powder, oregano, and smoked paprika.
  5. Place filling at one end of each chicken breast. Roll tightly and secure with toothpicks.
  6. In a skillet, heat olive oil over medium-high heat. Sear chicken for 3-4 minutes until golden brown.
  7. Transfer skillet to the oven and bake for about 25 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  8. Let chicken rest for 5 minutes, then slice and serve.
